Straat Snacks: Adrift by David Myers

Well-traveled chef David Myers’ new restaurant, Adrift, allures with its decor and amazes with a food and drink menu that represents the chef’s culinary experiences from around the world.

Award-winning chef and restauranteur David Myers, who has over two decades of culinary experience under his belt, makes his mark in Singapore with the opening of his new restaurant, Adrift. Located at the atrium of Marina Bay Sands, Adrift is a personal ode to the vibrant experiences as well as notable places, faces and flavors that Myers has encountered on his many travels on either sides of the Pacific.

The 4,000 square foot restaurant entices with its unique sculptural enclosure facade, and the space within is equally captivating, with more than adequate room for dining, drinking and lounging. The centerpiece cocktail bar, with its diffused lighting, leather bar stools and polished bar-top, is vintage Ginza-style. There’s even a private dining room that houses a surrealist library, objects of art and vintage photographs that add to the intimate mood.

Beef Tartare with Sesame, Egg Yolk and Chili

Helming the kitchen at Adrift is Executive Chef Dong Choi, who will be executing Adrift’s menu of tasteful pairings that put together playful snacks and raw items, artisanal toasts and charcoal-grilled treats, and also East-meets-West delectable delights. Mix-and-match sharing plates are prevalent, and reflect Myers’ most beloved dishes from his trips in Asia. Prime examples include the King Crab Melt with Pimento Cheese and Beef Tartare with Sesame, Egg Yolk and Chili; a tasteful mix of cultural traditions.

Adrift is also the ideal place for a tipple, thanks to bartender extraordinaire Sam Ross, a familiar name on the New York bar scene, who came on-board Adrift as its consultant. Cocktail classics like the Singapore Sling have been reinvented with both aged and dark rum, Benedictine, Maraschino Liqueur and orange bitters. If further proof of Adrift’s multi-cultural approach is necessary, the Harajuku cocktail, a nod to Tokyo’s prime district that fuses Hibiki Japanese whiskey, Gran Classico, Quinquina and chocolate bitters together, will put skeptics at ease.

Adrift is located at the Lobby of Marina Bay Sands Hotel, Tower 2. Opening hours are 6pm to 10pm (Sundays to Thursdays), 6pm to 11pm (Fridays and Saturdays) and 12pm to 2am for the bar (daily). Lunch service will start next month. Call 6688-5657 or 6688-5658 for reservations.
